Celebrating our 9th winter in Silverton, Oregon, it seems each year we develop more of a deep affection for our farm, embracing the beauty of seasons, wildlife, nourished crops, and the peace here. Recent conversations have delved into regenerative agriculture, exploring diversity, soil vitality, and the crucial role animals play in maintaining healthy soil. This month, let’s talk about the significance of organics.

Organics isn’t just a farming method; it’s a fascinating journey where each seed sown weaves a tale of sustainability, nourishing both the land and the body. Diving into the world of organics – where every leaf tells a story and the soil whispers the secrets of a thriving ecosystem. 

We frequently emphasize the significance of being certified organic. While many claim to “farm organic,” certification not only holds us accountable but also assures our customers that we adhere to stringent standards. In regenerative farming, avoiding pesticides and herbicides is paramount. Our approach involves embracing biological methods, like utilizing ladybugs and beneficial insects to tackle challenges. We prioritize sustainable practices, creating compost with a local dairy and steering clear of petroleum-based fertilizers.

The December dance with Santa – here are some Christmas traditions handed down from Rochelle’s parents and Peter’s Danish clan. One is the annual Santa photoshoot, a visual saga showing the wobbly toddler years through the awkward teens until we hit peak “too cool for Santa” rebellion. My mother, the curator of cringe-worthy childhood moments, proudly displayed each year on a board. Now, I’ve gleefully imposed this photographic legacy on our own kids. Thankful? Oh, immensely. After all, what’s the holiday season without a dash of Santa-induced embarrassment and a photo album that chronicles our journey from tiny tots to slightly less cool adults?

Then there’s the annual Danish delight that graces our holiday festivities—the renowned Aebleskiver!(ay·bluh·skee·vr) It’s akin to a small, spherical donut, a delectable treat that dances on the stovetop. Our secret weapon? A cast-iron Aebleskiver pan, the unsung hero that churns out seven of these golden orbs with each tantalizing flip. The ritual begins with a recipe handed down through generations and a batter so divine. As the pan sizzles to life, each divot cradles the promise of a puffy, pillowy delight. The artistry unfolds as we deftly rotate the Aebleskiver, creating a crispy, golden crust that gives way to a fluffy interior. A mouthful of Danish magic, it’s more than a treat—it’s a legacy of flavor that binds us to the heart of festive indulgence. Enjoy this recipe and give our Danish Heritage a try.
